I found this recipe a few years ago and have made a few personal tweaks to it. They are always a fan favourite with family and friends. I make a large batch, freeze them and thaw them out for my kids’ school lunches. Enjoy!
Ingredients:
5 overly ripe bananas, mashed (I freeze them until their peels are black, then thaw them overnight)
3/4 c. sugar
1 egg
1/3 c. melted butter
1 t. baking soda
1 t. baking powder
1/4 t. salt
1 to 1 1/2 c. flour
In large bowl stir together mashed bananas, sugar and egg. Add the melted butter and then stir in baking soda, baking powder, salt and flour until you have a thick batter. Fill each cup of your muffin tin about 3/4 full. (This amount tends to yield 12 muffins plus another two or three if I’m lucky.)
Bake at 375F for 20 minutes or so – until a toothpick comes out clean and muffins are golden brown in colour.
