My friend Rachel alerted me to this one which originates at Damn Delicious. And yes – it is damn delicious, alright – so good that not one child uttered a peep – just licked their plates clean. Best of all – there aren’t many ingredients and it was a quick and simple one to throw together on a weeknight. Enjoy.

Ingredients:

8 oz. cooked fettucine
2- 340g pkg of frozen, pre-cooked shrimp, thawed
salt and pepper to taste
1/2 c. butter, divided (1 stick)
4 cloves (or more) minced garlic
1/2 t. dried oregano
1/2 t. dried red pepper flakes
2 c. baby arugula
1/4 c. grated parmesan
2 T. chopped fresh parsley

Melt 2 T. butter in a large pan over medium-high heat. Add garlic, oregano, red pepper flakes and cook, stirring frequently for about 1 or 2 minutes. Add shrimp along with some salt and pepper and cook until heated through.

In a large pot, melt 6 T. butter and stir in cooked pasta, arugula and parmesan until arugula wilts (about 2 minutes). Then stir in shrimp.

Garnish with parsley when serving.
