Crispy on the outside, juicy on the inside – amazing!

I bought a package of 2 pork tenderloins on sale (for $6) a few months ago and they’ve been hiding in the freezer until yesterday. I followed this recipe and they turned out great – they were quick and easy to prepare, crispy on the outside yet moist on the inside and everyone gobbled them up – not bad for six bucks! Enjoy.

Ingredients:

pork tenderloin(s) weighing approx. 2 lb. total (adjust ingredients accordingly)
vegetable oil
2 T each: freshly squeezed lemon juice, lime juice and orange juice
2 t. each: dried oregano and basil
2 t. garlic powder
2 t. salt
2 t. cumin
2 t. chili powder
1 t. smoked paprika
1/2 t. pepper

Preheat oven to 400F and grease a large casserole dish. Then poke the tenderloins all over with a fork or knife and rub oil over all sides of the meat. In a small dish, whisk together oregano, basil, garlic powder, salt, cumin, chili powder, paprika and pepper. Then sprinkle all over meat, ensuring to pat it down to form a crust.

Place tenderloin(s) in prepared baking dish and proceed to drizzle the citrus juice over top. Bake for approximately 45 minutes (I baked until the internal thermometer reached 145 degrees).

Allow to rest in baking dish for five to ten minutes. Then slice into one-inch pieces, drizzle baking juices over top and garnish with cilantro if desired before serving.
