This meal was easy and delish!

This was simple and easy and best of all delicious. Serve it over a bed of rice with a sprig of coriander as garnish and warmed naan bread on the side.

Ingredients:

About 5 or 6 boneless, skinless chicken breasts cut into small pieces
1/2 of a sweet, yellow onion – diced
3 t. minced garlic
2 t. curry powder
1 t. turmeric
1/2 t. ground ginger
1 t. (or more) salt
14.5 oz. can of coconut milk
6 oz. can tomato paste
1/2 c. heavy cream
cooked rice
fresh coriander as garnish
naan bread on the side

Add all ingredients except heavy cream, rice, coriander and naan to the crock pot; stir, cover and cook on high for 3 to 4 hours or low for 6 to 8 hours. At the end of cooking time, add the heavy cream and allow to heat through. Then serve over rice with coriander as garnish and naan bread on the side.
