I made this for company and it was a success. Everyone loved it – even the kids!

Greek Chicken Marinade (for 4 or 5 chicken breasts)

Ingredients:

1/3 c. olive oil
1/4 c. red wine vinegar
juice of one lemon
4 cloves garlic, minced
1 T. oregano
2 t. thyme
1 t. salt
1 t. pepper

Mix all ingredients and marinate the chicken for at least an hour. I tripled the recipe for the amount of chicken I had and let them soak in the fridge for the entire day. Then we barbecued them – delicious! Even cold the next day!

Greek Salad Dressing (for about 8 people)

Ingredients:

1/2 c. olive oil
1/2 c. red wine vinegar
juice of one lemon
4 cloves garlic, minced
1 T. oregano
1 t. salt
1/2 t. pepper
1 t. sugar

Mix ingredients and then pour over salad made up of romaine lettuce, sliced cucumber, green pepper chunks, red onion rings, grape tomatoes, black olives and crumbled feta cheese.
