This is a quick and easy dish that is simple to whip together — and my kids gobbled it right up. I served it with a side of rice and stir-fried veggies.
Ingredients:
1/2 c. sour cream
2 T. melted butter
2 t. minced onion
1 1/2 t. dried dill or 2 T. chopped fresh dill
1/4 t. dried thyme
1/4 each salt and pepper
1 1/2 pounds salmon or sole fillets
In a bowl, combine sour cream, butter, onion and spices. Mix well. Season the fillets lightly with salt and pepper and then place in a single layer in a lightly buttered shallow dish. Spread the sour cream mixture over top. Then bake at 425F for about 15 minutes or until sauce is bubbly and fillets are opaque.
