Another recipe win under my belt – found this one in the newspaper last month. Made a couple of changes – and next time will make a couple more – everyone loved it. Best of all – I threw it together beforehand – and it took me less than 10 minutes to have it oven-ready! I served it with a green salad on the side.

*A friend used the marinade on a pork tenderloin – and added some orange juice to the mix. She declared it a success!

Another win for my recipe file!

Ingredients:

1/4 c. honey, warm
1 T. sriracha (the recipe called for samba oelek which I didn’t have so i improvised)
1 small bag of baby potatoes
2 T. olive oil
8 bone-in chicken thighs with the skin (next time, I will definitely use more and adjust the rest of the ingredients accordingly – my family gobbled these all up with no left-overs!)
1 orange, sliced into thin rounds

Preheat oven to 425F. Place chicken thighs (skin-side up) in a baking dish. Toss potatoes with olive oil and salt and pepper and then place around chicken. Meanwhile in a small bowl, mix honey and sriracha sauce. Then generously brush the mixture onto the chicken thighs. Season thighs with salt and pepper and then place orange slices over top of everything.

Bake for one hour or until chicken is cooked through and potatoes are tender.
