I found this one buried in my recipe box (a wedding shower gift from 1999). It was a quick and easy one and the kids gobbled it up. Enjoy.

Lemony deliciousness

Ingredients:

1 lemon
4 boneless, skinless chicken breasts
1 T. vegetable oil
1 can cream of broccoli soup, undiluted
1/4 c. milk
pepper

Cut four thin slices of lemon and squeeze the juice from the remaining lemon (the recipe only calls for 2 t. of the juice but I used it all because I like extra lemony flavour).

In a large pan, over medium-high heat, brown the chicken in hot oil. Add the lemon juice, soup, milk and pepper. Top each chicken breast with a lemon slice and bring to a boil. Then cover and cook over low heat for 5 minutes or so – until chicken is cooked through. Serve over rice.
