I like this one – that’s all that matters!

Full disclosure – my family is divided on this recipe. But I happen to love it – and that’s what matters most – so I’m posting it. It’s a slightly fancier version of plain old regular meatloaf and it’s an awesome way to sneak in some veggies. I served it up with some mashed potatoes and mashed carrots on the side. Plus, you can throw it together in the morning (even the night before) and then bake it at dinner time. Enjoy!

Ingredients:

1 lb. ground beef
1 lg. onion, finely chopped
2 cloves garlic, minced
1/2 c. bread crumbs
1 1/2 t. each: dried thyme, oregano and parsley
1 c. salsa (divided in half)
1 egg
1/2 t. each: salt and pepper
optional: some chopped green pepper, celery, carrot, canned corn
*I included about 3/4 c. chopped green pepper and celery

In a bowl, combine all ingredients – but only a 1/2 c. of the salsa. Once mixed, spoon into a prepared loaf pan, smoothing down the top. Spoon the remaining 1/2 c. of salsa evenly over top. Bake at 350F for one hour (until firm to the touch).
