Crispy, toasty . . . delicious!

Got this recipe from my friend Alice last year. Up until then, I had never mastered the nicely toasted and perfectly crispy pumpkin seed. But after trying this one out – my entire world changed!

Ingredients:

pumpkin seeds rinsed of goop
salt
olive oil

Boil the seeds in salted water for about 10 minutes. Then drain and spread out on a dish towel in a single layer to dry. (Be sure your dog doesn’t counter surf and eat them all up at this point!)

Once dry, toss with some olive oil and salt and then spread onto a parchment paper-lined baking sheet in a single layer. Bake at 400F for about 20 minutes but keep an eye on them. They may need more or less time in the oven. Voila! Perfect pepitas!
