These muffins are a family favourite . . . year round.

Perfect snack for autumn . . . these are a family favourite. I actually make them year round.

Ingredients:

2 c. flour
3/4-1 c. semi-sweet chocolate chips
2 t. baking powder
1 1/2 t. ground cinnamon
3/4 t. ground all spice
3/4 t. ground nutmeg
1/4 t. salt
3/4 c. sugar
2 eggs
3/4 c. canned pumpkin pureé (not pie filling)
1/2 c. vegetable oil
1/4 c. milk
1 t. vanilla

In a medium bowl, combine flour, chocolate chips, baking powder, cinnamon, allspice, nutmeg and salt. In a large bowl, whisk together sugar, eggs, pumpkin, oil, milk and vanilla. Stir in the flour mixture until combined. Spoon batter into prepared muffin cups and bake in a pre-heated oven at 375F for about 20 to 24 minutes – until an inserted toothpick comes out clean. It’s important not to under-cook these babies – if too doughy in the centre, they are just plain gross!
