
I picked this one up from an issue of Canadian Living (June 2013). Now I am not generally a fan of salsa – but this recipe sounded interesting so I thought I’d try it out. Watermelon, jalapeño and onion? Sounds gross. Eating it with a nacho chip – even worse. But it was great – and also very easy to throw together.
If you’re looking for something unique and refreshing for a summer snack or want to be the centre of attention at a friend’s potluck barbecue – then try this one out.
Ingredients:
2 generous cups of seeded, diced watermelon
1 small can of crushed green chilies (found in the Mexican food aisle) or minced jalapeño pepper to taste
2 sliced green onions
1/2 a lime, juiced
salt and pepper
Toss all the ingredients together and serve with tortilla chips. Makes 2 cups.
