These Buffalo Chicken Meatballs were excellent. The entire family gobbled them up with no leftovers – I’m going to double the recipe next time! The original recipe on Delish calls for blue cheese – but I substituted with cream cheese as I’m not a fan. This was the perfect weeknight supper with a kick. Enjoy.
Ingredients:
1 lb. ground chicken
Olive oil – for baking sheet
4 T. butter
1/3 c. hot sauce (preferably Frank’s red hot)
1/3 c. cream cheese
salt
1/3 c. panko bread crumbs
2 stalks celery, finely chopped
2 cloves garlic, minced
1 egg
1/4 c. sliced green onions (more for garnish)
1/2 t. onion powder
Heat oven to 425F and brush olive oil lightly onto a baking sheet. In a small saucepan over medium heat, combine butter, hot sauce and cream cheese and season with salt. Whisk for about 2 minutes, until butter and cheese have melted. Remove from heat and let cool.
Meanwhile, in a medium bowl, stir together bread crumbs, celery, garlic, egg, green onions and onion powder and season with salt. Add chicken and half the hot sauce mixture and mix well.
Form mixture into 1″ meatballs and transfer to the oiled baking sheet. Bake for about 15 -17 minutes – until lightly golden. Drizzle remaining sauce over the meatballs and garnish with additional green onions.
This looks so simple and easy but delicious. Going to have to give them a go sometime, maybe with turkey as we don’t really get chicken mince here.
