I came across this recipe on a blog I follow called Insecure Housewife. I’m always on the lookout for quick and easy homemade snacks to have on hand – for the kids, for entertaining. So I gave these a try. Not only were they relatively quick and simple to make – but they only require a few key ingredients. And best of all – they were a hit – with my kids AND our guests. Enjoy.
Ingredients:
2 c. shredded cheddar cheese
4 T. butter, cut into cubes
1 c. flour
3 T. water
3/4 t. salt
Place cheese, butter, flour and salt together in a large bowl and stir to mix. Transfer to a food processor and pulse. (I only own a mini-food processor so I did this in a few small batches). Add water 1 T. at a time and continue to pulse until mixture is doughy.
Remove dough and form into a ball. Wrap in plastic wrap and refrigerate for at least 20 minutes.
Then roll dough out on a lightly floured surface to about a 1/8 inch thickness and slice into small rectangles with a pizza cutter. Place on a parchment paper-lined cookie sheet. They will puff up as they bake – but won’t spread so you can place the dough rectangles close together – so long as they aren’t touching each other.
Bake at 350F for approximately 15 minutes – or until crispy.
*For pizza flavoured crisps, use mozzarella cheese and substitute pizza sauce for water (you may need more than 3 T to get the dough to form into a ball).
