I took note of this one from Real Simple magazine years ago but never made it until now. It was a quick and easy one to throw together for a weeknight dinner which is why I’m passing it on. Two of my three kids loved it – surprisingly the one who wasn’t crazy about the cooked pears is the one who loves pears. Enjoy.
Ingredients:
3 T. olive oil (divided)
4-6 skinless, boneless chicken breasts*
2 fresh pears, unpeeled, cored and cut into about 8 pieces
1 onion, diced
1 T. curry powder
1 T. flour
1 1/2 chicken broth
1 T. ketchup
salt and pepper to taste
In a large, heavy pan, heat 2 T. olive oil over medium-high heat and add chicken breasts. Cook for approximately 5 minutes per side (until browned) then transfer to a plate and set aside.
Add pears and cook for about 2 minutes – then remove them from the pan as well. Add 1 T. oil to pan and cook onion until soft, stirring occasionally – for about 2 minutes. Stir in the curry powder and flour and add broth and ketchup too. Heat to boiling.
Return meat and pears to the pan and coat with sauce before reducing heat to medium-low and simmering covered for another 15-20 minutes – until chicken is cooked through.
*Can also be made with 2 lbs. pork tenderloins (increase final simmering time to 25-30 minutes); 1.5 lbs skinless salmon fillets (decrease final simmering time to about 10 minutes). I may try it next time using boneless chicken thighs.
