This was one of Aunt Pat’s delicious recipes. It’s the perfect winter night’s meal and goes nicely with some oven-baked garlic bread. It also freezes well. Enjoy.
Ingredients:
1 lb. ground beef
1/2 t. salt (or more)
1/4 t. pepper (or more)
dried oregano and basil
1 Lg. onion, chopped
2 boxes of beef broth
2 c. water
1/2 c. celery, chopped
1 c. carrots, chopped
1 c. potatoes, cubed
1/4 c. dry lentils (opt.)
1/4 c. dry soup mix (opt.)
Mix all ingredients except meat in a large pot and bring to a boil. Then transfer to a crock pot. Brown ground beef, drain and add to the soup. Simmer on low for several hours. Delicious with some shredded cheddar cheese sprinkled over top of each serving.
