Another gem from my friend Sandra. And if you don’t want to take my word on this one being delicious – ask my kids – all three plates were licked clean. Trust me when I tell you this one was quick, easy and in my opinion excellent for company. Definitely serve this one up with a side of rice – as the sauce is delicious. I also served it alongside some roasted broccoli. You can find the original recipe here at A Sweet Pea Chef – but I made a few tweaks. Enjoy.

A simple, delicious crowd-pleaser.

Ingredients:

1/2 c. honey
2/3 c. dijon mustard
1 t. paprika
1 t. salt
1 t. black pepper
4 t. apple cider vinegar
2 t. garlic powder
1/2 t. cayenne pepper
2 T. olive oil
2 Lg. trays (approx. 16) of skinless, boneless chicken thighs

In a large bowl, combine all ingredients except for olive oil and chicken – stir. Then add thighs and allow to marinate for about an hour.

Then heat olive oil in a large pan and add thighs. Allow to simmer for about 6 or 7 minutes before flipping and continuing to heat for another 6 or 7 minutes. Transfer thighs to a large baking dish, pour sauce over top and finish up in the oven at 350F for about another 15-20 minutes.

Serve with rice on the side.
