If you’re looking for an easy, weeknight meal – quick to throw together and sure to be devoured – yet not so run-of-the-mill. Then take note. This rich, creamy and delicious meal took 20 minutes to make and about five minutes for the kids to lick their respective plates clean. Enjoy.

Ingredients:
500g angel hair pasta (I used spaghettini)
1 – 454g bag of pre-cooked salad shrimp
1 – 270mL bottle of prepared pesto at room temperature
1/2 c. whipping cream
grated zest from 1 lemon
2/3 c. shredded fresh parmesan cheese
Cook pasta and then add in shrimp for the last few minutes. Once water re-boils, drain. Meanwhile, in the same pot used to cook pasta, combine pesto, cream and lemon peel and mix well. Add pasta and shrimp, sprinkle with cheese, stir and serve.
