This recipe was simple to throw together and delicious – kids liked it too; a nice and easy weeknight supper if ever there was one. My friend Melanie came up with this concoction in order to satisfy her two picky eaters – and she thoughtfully passed it on to me. Enjoy.
Ingredients:
1 lb. mild turkey Italian sausage (pork will work too)
450 g penne, cooked
450 g penne, cooked
6 T. olive oil
6 cloves of garlic, minced
1 red pepper, 1 green pepper, 1 yellow/orange pepper, sliced into strips
1 pint of cherry/grape tomatoes, sliced in half
salt and pepper
Feta cheese, crumbled
Basil leaves, as garnish
Cook sausage as directed, then slice into discs.
While pasta is cooking, heat olive oil in large frying pan on medium heat and add minced garlic. Cook for a few minutes and add peppers. Continue cooking about 5 minutes until peppers are tender-crisp – stirring regularly.
Add tomatoes and sausage to pan and continue to cook and stir for several more minutes.
Drain pasta and add to pan and continue cooking until heated through. Season with salt and pepper as required.
Sprinkle each individual serving with a generous handful of crumbled feta cheese and basil leaf.
It looks super tasty and surprisingly fresh and light xx
