This recipe is to die for – simple and easy which is my type of meal. Recipe originates at Chew Out Loud – but I made a few changes when I was throwing it together. I served it with salad, rice, hummus and some toasted Naan and pita bread on the side. Everyone at my house loved it – thanks for sending this recipe my way, Cousin Sarah! Enjoy.
Ingredients:
2 kg. (4 lb) package of skinless, boneless chicken thighs (you can easily adapt the spice amounts if you plan on using less chicken) – sliced into strips
1 T. olive oil
Rub:
3 t. paprika
3 t. cumin
1.5 t. garlic powder
1.5 t. onion powder
1.5 t. allspice
1.5 t. ground turmeric
1.5 t. salt
1/2 t. cinnamon
1/2 t. pepper
1/4 t. cayenne
2 T. olive oil
Once chicken is sliced, place into large bowl along with 1 T. olive oil and stir to coat. Then in a separate bowl, combine dry rub ingredients and stir to combine before adding the 2 T. olive oil. Add chicken to the bowl containing rub paste and stir to coat. Feel free to let marinate for a few over hours – even overnight in the fridge. But I made this recipe almost immediately and it was still delicious!
Heat oven to 400F and line a large baking sheet with foil. Spread chicken pieces in a single layer. Bake for 25 minutes, then flip pieces with a spatula and place under broiler on high for a further 7 minutes.
Serve immediately.
