My friend and neighbour Lise found this recipe and sent it my way. Not only is it relatively simple to make, it’s also delicious. We snacked on it over here – but I think it would go nicely with a bowl of soup or chili – even as a burger bun. I have it on good authority that it also makes for a nice tomato sandwich. The original recipe is posted at delish.com – but I made a few changes which I’ve included below. Enjoy.

Ingredients:

If you like pickles, then you’ll love pickle bread!

1/2 c. sour cream
1/2 c. vegetable oil
2 Lg. eggs
1 T. sugar
3/4 c. flour
1 1/4 t. baking powder
1/2 t. salt
1 T. pickle juice
3/4 c. chopped pickles
1 c. cheddar cheese, shredded
1 T. dried dill or 2 T. fresh

In a large bowl, whisk together sour cream, vegetable oil, eggs and sugar until smooth. Add flour, baking powder, salt and pickle juice and stir until combined. Fold in the chopped pickles, cheese and dill.

Pour batter into a parchment paper-lined loaf pan and bake at 350F for 40 minutes – until bread looks golden and a toothpick inserted into loaf centre comes out clean.

Cool and then slice.
