This no-brainer of a meal sounds too good to be true. Only a few key ingredients, quick to throw together and a fast bake. But trust me – it’s a hit. It was at my house anyway. Enjoy.

A quick and easy dinner in a flash.

Ingredients:

lean fish fillets (I used sole*)
a mix of fresh veggies – I used cauliflower, broccoli and carrots
2 T. chicken broth
dried dill
salt and pepper to taste

Heat oven to 450F. Cut veggies into bite-sized pieces and nuke in the microwave for about 5 minutes to soften. Then rip sheets of tin foil (as many as servings you will be making).

In centre of each piece of foil, place fish fillets with a serving of veggies around it. Sprinkle fish with dill and add salt and pepper to the whole she-bang. Drizzle broth over each mound of veggies.

Fold sides of foil up to make a tent and fold top edges over in order to seal – but be sure to leave room for steam. Once you have a loose packet, place on a cookie sheet and bake for about 20 – 30 minutes.

*Next time, I will place 2 to 3 sole fillets in each packet. I didn’t realize how much they’d shrink with cooking!
