My friend Sandra brought a tray of these treats over to my place earlier this year. When she passed along the recipe to me, I could not believe how easy they were to put together. I’ve made them several times and they are always a hit. Enjoy.

Ingredients:

Easy to make and a guaranteed hit.

1 c. butter, softened
1/2 c. white sugar
2 c. flour
4 eggs
1 1/2 c. white sugar
1/4 c. flour
juice from 2 lemons

In a medium bowl, mix together butter, 2 c. flour and 1/2 c. sugar. Then press into the bottom of an ungreased 9 x 13 inch pan. Bake for 15-20 minutes in a pre-heated 350F oven (until firm and golden).

Meanwhile, in another bowl – whisk together the remaining 1 1/2 c. sugar, 1/4 c. flour, eggs and lemon juice. Pour this over the baked crust.

Bake for another 20 minutes – then allow bars to cool completely before cutting into squares. If desired, sprinkle with some icing sugar.
