I found this one years ago in an edition of Kraft Magazine. It’s a quick and simple one to throw together; nothing fancy – but that’s how we roll. It’s kid-approved as well. Enjoy.

Nothing fancy – but simple, easy and delicious.

Ingredients:

1 lb. pork tenderloin, cut into thin strips
1/4 c. Italian dressing
1 medium red pepper, sliced into thin strips
2 c. fresh snap peas (or snow pea pods)
3 or 4 green onions, chopped
2 T. soy sauce
1 t. corn starch
1/2 t. ground ginger
rice

Cook rice. Meanwhile, heat Italian dressing in a large pan over medium-high heat. Add meat; cook and stir for 2 minutes. Then add peppers and peas and continue cooking for another few minutes, stirring often. Add green onions and cook and stir for one minute.

Mix soy sauce, corn starch and ginger until well-blended. Add to the meat mixture in the pan and cook for another few minutes until sauce thickens; stirring often. Serve over rice.

Makes 4 or 5 servings.
