This side dish was plucked from the pages of the Toronto Star. It’s healthy, simple and cooked and plated in about 5 minutes. I crossed my fingers when I put it in front of my kids – but there was no need – they gobbled it up faster than it took me to make it! Enjoy.

This side dish complements any main.

Ingredients:

4 garlic cloves, minced
2 T. olive oil
8 c. kale, stems removed and thinly sliced

In a large non-stick pan over high heat, brown the garlic in the oil. Add the kale and cook, stirring for 5 minutes. Season with salt and pepper, toss and serve.
