Another awesome recipe from my friend Cathy — she’s the mother of three, including two hungry teen boys so when it comes to delicious casseroles, she knows what she’s doing. Based on the Taco Fiesta Bubble Up Casserole found at Drizzle Me Skinny, I made a few changes and the finished result was eagerly gobbled up by my brood. Easy to make ahead of time, I kept it refrigerated and then baked for an hour. Enjoy.

Prep work for this dish is minimal.

Ingredients:

1 lb. ground beef
1 340g tube of country biscuits dough (for 10 biscuits)
1 pkg. taco seasoning (30g)
1 430 mL jar of salsa
2 bell peppers, diced (I used red and yellow)
1 c. red onion, diced
2 c. cheddar cheese, shredded
3 green onions, chopped
sour cream for serving

Brown ground beef and add taco seasoning, chopped onion and peppers. While cooking, cut each biscuit into 6 pieces. Once beef is cooked, transfer to a large mixing bowl and pour in salsa – stir to mix.

Place half the biscuit pieces into a sprayed lasagna dish and cover with half the beef mixture. Sprinkle with cheese. Repeat layers and sprinkle with green onion.

Delish!

Loosely cover with foil and cook for 30 minutes at 350F if making immediately. If refrigerated, increase cooking time to 45 minutes. Then remove foil and continue baking for an additional 15 minutes.

Allow to rest for five minutes before serving. Top with a dollop of sour cream if desired.
