Tastes like lasagna but less time-consuming and best of all – none of the heaviness associated with the rich and cheesiness of a slice of lasagna. This hearty soup is a winner for several reasons: it’s quick and easy to throw together, it’s extremely forgiving so use any ingredients you have on hand, it freezes well – and it’s family tested. Thanks to my best friend Steph – for making this, dropping off a batch and then sending along the recipe. Enjoy.

 

Ingredients:

one large cooking onion, minced
4-6 cloves of garlic, minced
2 lb. ground beef
1 large can diced tomatoes with Italian spices
1 large can tomato paste
2 900mL boxes of beef broth
Italian herbs to taste (oregano, basil etc.)
salt and pepper (more salt if using sodium-reduced broth)
3/4 of a box of bow tie noodles
cheeses for garnish: ricotta, shredded mozzarella, parmesan etc.

Sauté the beef in a large skillet and while browning add in chopped onion and garlic. In a large soup pot, pour in broth, tomatoes, tomato paste, herbs and spices and bring to a slow boil. Add cooked ground beef and allow to simmer on medium-low heat. Adjust spices accordingly.

Meanwhile, cook noodles in a  separate pot – rinse, drain and add to the soup.

Garnish each soup serving with cheeses.

*This is an extremely flexible recipe – while Steph used a mixture of beef and chicken broth for hers, I stuck with just beef. She also used ground beef mixed with sausage meat while I only used ground beef. Feel free to stir in any type of cheese you’d like – the first time I served it, I didn’t have ricotta so used cottage cheese instead and it was just as good.
